Canning Chili

My ever so wonderful border collie decided yet again that the appropriate time to wake up is in fact before the sun….even on the weekend.  I decided to take this time to can some turkey chili for myself.  I personally love a good bowl of chile with a fair amount (really actually a lot) of cheddar cheese in the winter.  All my canning supplies are in our basement so I carted up all my jars, lids, rings, pressure canner, and cans of diced tomatoes.  Then I went down and got more jars since I apparently have a fear of not having enough jars.  I put all my lids and jars in the dishwasher while I dumped all the chile components in the pot.  I use the regular chili recipe found in the ball canning book.
I should mention as a side note jack our orange cat that I currently seem to be at war with felt he needed to oversee all canning today.  I was cutting up the hot pepper when a cat hair floated into my eye  I automatically reached up to rub my eye and realized mere millimeters from my eye that it would go terribly wrong.  My life flashed before my eyes!  I sure that jack saw to making sure there was orange hair in every jar.
The chili turned out wonderful and all but one of the jars plinked which I think is pretty good.  Gus spent most of the day watching over his little farm.
