Mexico Soup
Had a wonderful day! I went to our public market which is fairly large here. I thought to myself you should get some lettuce cheap as a treat for annabelle (one of rabbits has a wound we are treating). Also thought that I should get some fresh veggies for myself. We walked the whole market even saw some really sketchy meat and fish stalls. What do I end up leaving with … a pair of mittens yup mittens. I couldn’t help myself they were so cute and my fingers were so cold. I went totally unprepared and did not bring gloves or hat, I did however bring a giant bag to put all my loot in …I mean my mittens that I am actually just going to wear.
I also went to Jo-ann Fabrics which is very dangerous for as a quilter. I got some really cute things to wrap presents in, as well as a few things for me. I decided to make soup tonight since it cold out and Jeff isn’t home. A nice warm hearty soup sounded good.
Hearty Mexico Soup
Ingredients:
1 medium onion
1 T minced garlic
2 T butter
4 cups chicken broth
1 can diced tomatoes
shredded chicken
1 bunch of cilantro
1 lime
2 t black pepper
1 teaspoon ground cumin
1 teaspoon sea salt
1 teaspoon oregano
shredded cheese
avocado

Ingredients:

shredded chicken
1 bunch of cilantro
1 lime
2 t black pepper
1 teaspoon ground cumin
1 teaspoon sea salt
1 teaspoon oregano
shredded cheese

In a medium pot melt butter and saute onion and garlic until translucent. Add chicken broth and canned tomatoes. Add shredded Chicken (you can use a rotisserie chicken). Simmer for 15 minutes. Add chopped cilantro and juice of lime. Season to taste the above amounts are really more of suggestions :). I usually put some cheese in mine as well as diced avocado and enjoy!
